Oatmeal Pancakes

Ingredients
  • 1 egg
  • 1 cup organic oats (not quick cooking, if possible)
  • 1/8-1/4 cup flour (just enough to coat the oats)
  • 4 t. sugar
  • 1/2 t. baking powder
  • 1 1/4 t. baking soda
  • 3/4 t. salt
  • 1 T. melted butter or oil
  • 1 cup buttermilk
Instructions
  1. Mix the dry ingredients. Add the other ingredients and stir. Let sit 30 minutes before cooking.
